Crafted from a harmonious trio of exceptional origins, our House Blend showcases the rich sweetness and balance that define great coffee. The Brazilian component from Fazenda Vale do Cerrado delivers a foundation of smooth milk chocolate and roasted almonds, while the Colombian Red Bourbon from Paraiso Farm 92 adds vibrant raspberry and dried berry notes. Completing the profile, the regional lot from Wilton Benitez contributes layers of brown sugar and crème brûlée sweetness.
The result is a cup that’s syrupy and smooth, with a comforting richness and a refined, lingering finish — a perfect everyday indulgence.
This blend was inspired by Erika Del Basto, my wife and constant companion through every step of this coffee journey. She embodies everything this blend represents — rich, sweet, and lingering — a reflection of her warmth, dedication, and the love that fuels our craft.
SINGLE ORIGIN COLOMBIA - “Chiroso” LAS FLORES
Multi-award-winning globally, this coffee was used to claim the win at the 2023 Australian National Brewers Cup Title.
"Chiroso", a spanish-influenced name, is a mutation of Ethiopian Landrace.
Colombia Las Flores coffee is produced with care, ensuring optimal maturity for processing. Cherries are put in beds for 48 hours of oxidation, then submerged in water and heated from 15°C to 50°C for 48 hours of anaerobic fermentation. The drying process starts with a fast phase to enhance flavours, followed by a slower phase to protect the physical integrity of the seed. Drying uses both mechanical and solar methods, lasting 24 hours and 2 weeks respectively.
Spanning 14 hectares in the Huila region, the Las Flores farm has grown from the 18,000 trees planted in 1990 by the Vergara family matriarch to 90,000 today. In 2006 Las Flores participated in the Cup of Excellence, marking the beginning of a journey into the world of specialty and differentiated coffees. Today, Edilberto Vergara and his son Johan are devoted to refining their processes to focus on quality of cup. All the coffee at Las Flores is handpicked and naturally dried to ensure consistency in quality. Different fermentation techniques such as oxidation followed by anaerobic process and fermentation in bags is used to create unique flavour profiles.
The Huila growing region is celebrated for producing coffee with brighter acidity and stronger fruit notes. The Vergara family have created a coffee with a mesmerizing aroma and intensity of flavour that will simply take your breath away. An absolute must try for coffee connoisseurs looking to make a statement!
